Beet Salad

Fresh beets are showing their ruddy faces at Farmers Markets right now. They make a delicious salad when roasted and combined with naval oranges. Arrange both on a platter and drizzle with our light, citrus dressing. Scatter fresh herbs (I used mint) and crumbled feta on top, and finish with some fresh cracked pepper. A simple, fresh summer salad. Enjoy!
(P.S. Don’t throw away those beet greens – they are tasty and full of antioxidants – braise them on their own or with other greens for a quick side dish.)
Ingredients
1 bunch of beets, roasted, peeled and sliced
3 naval oranges, peeled and sliced
1-2 tablespoons fresh mint
¼ cup crumbled feta
2 tbsp. olive oil + 1 tbsp. orange juice, whisked together
Fresh cracked pepper
